Sweet potato bowl with black beans

Ingredients (for 1 serving)
- 1 medium sweet potato
- 100 g black beans (canned)
- 50 g corn
- 25 g Greek yogurt
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper
Preparation
- Peel the sweet potato, cut into cubes, and bake in the oven at 200 °C (392 °F) for about 25 minutes.
- Rinse the beans and corn, season with paprika, cumin, salt, and pepper, and warm briefly.
- Arrange everything in a bowl and serve with a dollop of yogurt.
If you prefer a lower-fat version, you could use yogurt with 2% fat or reduce the amount of corn.
