Salmon with quinoa and spinach

Ingredients (for 2 servings)

  • 2 salmon fillets (approx. 150 g each)
  • 100 g quinoa
  • 150 g fresh spinach
  • 1 clove of garlic
  • 1 tbsp olive oil
  • Salt, pepper, and lemon juice

Preparation

  1. Cook the quinoa according to the package instructions.
  2. Season the salmon with salt, pepper, and lemon juice, then fry in a pan with olive oil for about 3–4 minutes per side.
  3. Finely chop the garlic, sauté it in the pan, and briefly toss the spinach until it wilts.
  4. Serve the quinoa, spinach, and salmon on a plate.
