Grilled chicken with sweet potato and broccoli

Ingredients (for 2 servings)

  • 200 g chicken breast fillet
  • 2 medium sweet potatoes
  • 200 g broccoli
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Optional: 1 tbsp yogurt as a dip

Preparation

  1. Peel the sweet potatoes, cut into cubes, and mix with 1/2 tbsp olive oil, salt, and paprika.
  2. Bake in the oven at 200 °C (top/bottom heat) for about 25 minutes until soft and slightly browned.
  3. Cut the broccoli into florets and steam or cook in lightly salted water for about 5–7 minutes until tender-crisp.
  4. Season the chicken breast with the remaining olive oil, garlic powder, salt, and pepper.
  5. Grill in a grill pan or on a barbecue over medium heat for 5–6 minutes per side, until fully cooked.

Arrange sweet potatoes, broccoli, and grilled chicken on a plate. Optionally, add a dollop of yogurt as a dip.
