Grilled chicken with sweet potato and broccoli

Ingredients (for 2 servings)
- 200 g chicken breast fillet
- 2 medium sweet potatoes
- 200 g broccoli
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Optional: 1 tbsp yogurt as a dip
Preparation
- Peel the sweet potatoes, cut into cubes, and mix with 1/2 tbsp olive oil, salt, and paprika.
- Bake in the oven at 200 °C (top/bottom heat) for about 25 minutes until soft and slightly browned.
- Cut the broccoli into florets and steam or cook in lightly salted water for about 5–7 minutes until tender-crisp.
- Season the chicken breast with the remaining olive oil, garlic powder, salt, and pepper.
- Grill in a grill pan or on a barbecue over medium heat for 5–6 minutes per side, until fully cooked.
Arrange sweet potatoes, broccoli, and grilled chicken on a plate. Optionally, add a dollop of yogurt as a dip.
