Bread with egg and avocado

Ingredients (for 1 serving)

  • 1 slice whole grain bread
  • 1 egg
  • 1/4 avocado
  • 1 tsp lemon juice
  • Salt and pepper

Preparation

  1. Boil the egg until soft (about 6 minutes).
  2. Mash the avocado with a fork and season with lemon juice, salt, and pepper.
  3. Spread the avocado mixture on the bread slice, top with the egg, and serve.

For a lighter version, you can use a smaller amount of avocado or substitute an egg white for a whole egg.
