Pasta with prawns and vegetables

Ingredients (for 2 servings)

  • 150 g whole grain pasta
  • 200 g shrimp
  • 100 g zucchini
  • 100 g cherry tomatoes
  • 1 clove of garlic
  • 1 tbsp olive oil
  • Salt, pepper, and basil

Preparation

  1. Cook the pasta according to package instructions.
  2. Season the shrimp with salt, pepper, and garlic, then sauté in olive oil.
  3. Dice the zucchini, halve the tomatoes, and toss them in the pan with the shrimp.
  4. Combine the pasta with the shrimp and vegetable mixture, and serve with fresh basil.

If you’d like a lower-fat version, you can reduce the olive oil or add more vegetables to make the dish more filling.
