Breakfast: Omelette with vegetables and cheese

Ingredients (for 1 serving)
- 3 eggs
- 1 handful baby spinach
- 1 small bell pepper (diced)
- 50 g feta cheese (or another cheese)
- 1 tbsp olive oil
- Salt and pepper to taste
Preparation
- Whisk the eggs in a bowl and season with salt and pepper.
- Heat olive oil in a pan, briefly sauté the bell pepper and spinach.
- Add the egg mixture, let it set, then crumble the cheese on top.
- Fold the omelette and serve.
