Breakfast: Omelette with vegetables and cheese

Ingredients (for 1 serving)

  • 3 eggs
  • 1 handful baby spinach
  • 1 small bell pepper (diced)
  • 50 g feta cheese (or another cheese)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Preparation

  1. Whisk the eggs in a bowl and season with salt and pepper.
  2. Heat olive oil in a pan, briefly sauté the bell pepper and spinach.
  3. Add the egg mixture, let it set, then crumble the cheese on top.
  4. Fold the omelette and serve.
